All the masalas have beautifully infused with the veggies and the food naturally becomes more aromatic & flavorsome :)
And you know how they also say that having to cook at home on a Sunday is just WRONG!!!!!
Monday blues have begun setting in, and all you really wana do is curl up and have a hot cuppa cocoa..
Given this scenario, how do you really manage to fork out a lovely dinner???
Now we Indians have created some fabulous dishes from leftovers.. and the laziness to actually cook a whole meal from scratch....
The items that top the list are; Stuffed Parathas, Bishebele Bhaat etc....
But the all time favorite remains the good old Pav Bhaji!!!!
So I had these two lame ass sabjis staring at me from the refrigerator..
Probably the worst Sabjis ever: Cabbage and French Beans.. YUCK!!
Spoiler alert: These two scary looking monsters are going to turn into some fantastic finger licking Stuff!!!
So lets get started then...
What you will need:
Step 1: Saute the Onions in vegetable oil
Step 2: Saute the Garlic
Step 3: Mash in the Tomatoes

So lets get started then...
What you will need:
- Left over sabjis
- Two Onions, Diced
- Two Tomatoes, Diced
- 3 Cloves of garlic, Bashed and diced
- Pav Bhaji Masala, 3 tea spoons
- Salt & Sugar to taste
- One dollop of butter
- Pav (Buns)
Step 1: Saute the Onions in vegetable oil
Tip: Add half a tea spoon of salt here.. It will add a beautiful flavor to the final product
Step 2: Saute the Garlic
Step 3: Mash in the Tomatoes
Toss the tomatoes for a minute
Then Start mashing this tomato, onion & garlic mixture into a thick lumpy & smooth mixture
Step 4: Add the Pav Bhaji Masala
Add half a cup of water and continue bashing for another minute...
Till it looks like this...
Step 5: Mix in the left over Sabjis
Continue bashing till you get a lumpy yet smooth consistency
The final Magical touches:
- Add one Dollop of Butter
- 2 tea spoons of sugar - this will away any kind of tartness in the food
- Just a pinch of salt, if needed, to balance the flavor
Cover the pan with a lid & switch off the gas.. This will allow the steam to infuse all the flavors
Step 5: lightly toast the Pav (Buns) in butter
And there you have it!!
Lovely, delicious & oh so beautifully fragrant Pav Bhaji!!
